Tandoori Vegetable Skewers

Vegetables don’t tend to be at the top of many favourite-food lists, but these ones will have you wondering why. A vibrant tandoori kick punches up your usual vegetable medley in a recipe worthy of the winner’s circle.

INGREDIENTS

  • 2 tbsp Patak’s® Tandoori Marinade
  • 3 tbsp water
  • 1 eggplant, chunks
  • 1 zucchini, chunks
  • 1 yellow bell pepper, diced in chunks
  • Patak’s® Sweet Mango Chutney, for dipping

INSTRUCTIONS

  1. Gently cook the Patak’s® Tandoori Marinade with water in a frying pan on medium heat for a few minutes to release the full flavours and aroma of the marinade. Let the paste mixture cool.
  2. Mix the cooled marinade mixture and vegetables together and proceed to skewer them in preferred order.
  3. Place the skewers on the barbecue at medium-high heat, turning occasionally, until they are cooked through, 5-12 min, and serve with Patak’s® Sweet Mango Chutney on the side as a dip.
  4. Enjoy with a side of fluffy basmati rice or warm naan.
