Spicy Mango Chicken

Is there anything better than a delicious meal that’s easy to make? This spicy mango and curry dish is full of tantalizing flavours that are sure to give a burst of flavour to any meal

INGREDIENTS

  • 2 tbsp oil
  • 4 chicken breasts, diced
  • 1 medium onion, chopped
  • 4 tbsp Patak’s® Mild Curry Spice Paste
  • 6 tbsp water
  • 1 cup canned tomatoes, chopped
  • 1 tbsp Patak’s® Hot Mango Chutney
  • Fresh coriander, chopped (garnish)

INSTRUCTIONS

  1. Heat the oil and sauté the chicken for 5 to 7 min, until lightly browned.
  2. Add the onions and cook for 2 min until translucent.
  3. Stir in the Patak’s® Mild Curry Spice Paste, water and tomatoes.
  4. Cover and simmer for 20 min until the chicken is cooked through.
  5. Stir in the Patak’s® Hot Mango Chutney.
  6. Serve over rice, garnished with coriander.
