This egg dish is perfect for breakfast or a weekend brunch. Curry leaves add some aromatic flavours to this dish, which is balanced out with fresh coriander. Go ahead and whisk up a taste of India!

Ingredients

  • 1 tbsp oil
  • 5 or 6 curry leaves
  • 1 tsp Patak’s® Mild Curry Spice Paste
  • ¼ cup water
  • 1 can (415 g) baked beans
  • 4 eggs
  • 4 slices brioche bread
  • Fresh cilantro, chopped (garnish)

Instructions

  1. Heat the oil in a pan, add the curry leaves and let them sizzle to release their fragrant aroma. 
  2. Add the Patak’s® Mild Curry Spice Paste and the water. Cook until most of the water has evaporated. 
  3. Stir in the baked beans.
  4. In simmering water, poach the eggs.
  5. Toast the brioche buns. 
  6. Add the Masala beans and top with a poached egg. 
  7. Garnish with coriander. Enjoy with bacon and grilled tomato.
