Masala Akoori on Brioche

This scrambled egg dish is perfect for breakfast or a weekend brunch. Green chilies add some spice to the flavours of Mild Curry Paste, which is balanced out with fresh cilantro. Go ahead and whisk up a taste of India!

Mild Curry Spice Paste

INGREDIENTS

  • 1 tbsp butter
  • 1 onion, chopped
  • 1 tomato, chopped
  • 2 green chilies, seeded and finely chopped
  • 1 tsp Patak’s® Mild Curry Spice Paste
  • ¼ cup water
  • 4 eggs, beaten
  • Fresh coriander, chopped (garnish)
  • Salt, to taste
  • 4 slices brioche bread

INSTRUCTIONS

  1. Heat the butter in a pan.
  2. Add the onions, tomatoes and green chilies, and sauté 1 min.
  3. Add the Patak’s® Mild Curry Spice Paste Paste and the water.  Cook until most of the water has evaporated.
  4. Add the eggs, coriander and salt and scramble.
  5. Toast the brioche bun.
  6. Add Masala Akoori and garnish with coriander.
  7. Enjoy with bacon and grilled tomato.
