Madras Spice Paste

INGREDIENTS

  • 1 tbsp Patak’s® Madras Spice Paste
  • 2 tbsp plain thick yogurt
  • 1 clove garlic, finely chopped
  • 1 ¼ cup broccoli florets
  • 1 red pepper, sliced
  • 1 tbsp pine nuts
  • fresh coriander, chopped for garnish

INSTRUCTIONS

  1. Preheat the oven to 180°C/350°F.
  2. In a large bowl mix together the Patak’s® Madras Spice Paste, yogurt and garlic.
  3. Add the broccoli and red pepper and make sure they are coated well in the marinade.
  4. Transfer the mixture to a roasting pan and bake for 20-25 min, stirring once or twice. If the vegetables start to brown, cover with a piece of foil.
  5. Add in the pine nuts and cook for a further 5 minutes.
  6. Sprinkle with fresh cilantro before serving.
