This delightful korma vegetable stack only uses a few simple ingredients, but creates scrumptious flavours for the whole family to enjoy.

Korma Spice Paste

INGREDIENTS

  • 2 cloves garlic, crushed
  • 1 tbsp oil
  • ½ cup Patak’s® Korma Spice Paste
  • 1 can (796 ml) tomatoes, chopped
  • ½ cup frozen peas
  • 1 sweet potato, sliced in 0.5″ rounds
  • ½ large (or 2 small) zucchini, sliced in 0.5″ rounds
  • ½ eggplant, sliced in 0.5″ rounds
  • 2 tsp coconut cream (+ more for garnish)

INSTRUCTIONS

  1. Fry the garlic in the hot oil until fragrant.
  2. Add the Patak’s® Korma Spice Paste and fry on low heat until fragrant (about 2 min).
  3. Add the tomatoes and peas and simmer for 10 to 15 min.
  4. Meanwhile, BBQ or grill all of the vegetables until tender (using oil to prevent sticking).
  5. Remove the sauce from heat and stir in the coconut cream.
  6. To serve, stack the vegetable slices, top with the Korma sauce and a dollop of coconut cream
