- 2 cloves garlic, crushed
- 1 tbsp oil
- ½ cup Patak’s® Korma Spice Paste
- 1 can (796 ml) tomatoes, chopped
- ½ cup frozen peas
- 1 sweet potato, sliced in 0.5″ rounds
- ½ large (or 2 small) zucchini, sliced in 0.5″ rounds
- ½ eggplant, sliced in 0.5″ rounds
- 2 tsp coconut cream (+ more for garnish)
