1 block Paneer Cheese, sliced in half and then diagonally in half again
1 zucchini, sliced thick on an angle
1 yellow pepper, sliced and seeded
2 green onions, sliced diagonally into long thin slices
2 tbsp Tandoori Paste
1 tbsp of oil
For the dressing
1 tsp raw cumin seeds
1 tbsp olive oil
½ tsp black pepper
Pinch of salt
1 tbsp fresh basil
½ juice of a lime
For the peppers
Stir paste and oil together.
Using a brush, brush the paste onto every piece of vegetable and cheese.
Put them on the griddle for about 10 minutes.
In a dry frying pan, turn on heat. Add cumin seeds and once you can start smelling them, turn the heat off. Remove them and put into a bowl. Lightly crush the seeds. Add olive oil, pepper, salt, basil, lime juice and stir together.
Put roasted veggies and cheese on top of a salad. Add tomatoes.
