Bombay classic is traditionally spiced with garlic and coriander, and pairs perfectly with a chicken dish. It’s delicious and so easy to make with our Tikka Masala Spice Paste.

INGREDIENTS

  • 2 tbsp Patak’s® Tikka Masala Spice Paste
  • 1 tbsp Patak’s® Sweet Mango Chutney
  • 10 shallots, peeled
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 12 small potatoes
  • 3–4cloves of garlic
  • 2 tbsp rosemary
  • 1 tsp black pepper
  • Sea salt flakes and rosemary (garnish)

INSTRUCTIONS

  1. Preheat oven at 390 °F (200 °C).
  2. Mix the Patak’s® Tikka Masala Spice Paste, Patak’s® Sweet Mango Chutney, shallots, butter and oil in a bowl.
  3. Add the whole potatoes, and mix.
  4. Place a sheet of aluminum foil on a baking pan (large enough to wrap around the potatoes).
  5. Transfer the potato mixture to the foil.  Add the garlic, and sprinkle with rosemary and black pepper.
  6. Wrap the potatoes in the foil, closing to seal.
  7. Cook in preheated oven for 30 to 45 min, until the desired level of crispiness is reached.
  8. Garnish with sea salt flakes and rosemary.
