Cook up this classic Indian veggie dish in just 30 minutes! Aloo Gobi is a much loved vegetarian curry made from cauliflower, spinach, fresh tomatoes and coriander.

Korma Spice Paste

INGREDIENTS

  • 1 onion, diced
  • 1 tbsp oil
  • 4 tbsp Patak’s® Korma Spice Paste
  • 2 cups cauliflower, cut into florets
  • 1 ¼ cup potatoes, diced
  • 1 ½ cup water
  • 3 tomatoes, chopped
  • ½ cup frozen spinach, chopped
  • Fresh coriander, chopped (garnish)

INSTRUCTIONS

  1. Fry the onion in the hot oil until tender.
  2. Stir in the Patak’s® Korma Spice Paste and cook for 3 min.
  3. Add the cauliflower, potatoes and water.
  4. Cover and cook for 15 min.
  5. Add the tomatoes and simmer for 10 min or until the cauliflower and potatoes are cooked.
  6. Add a little water if necessary.
  7. Add the spinach and cook for 5 min.
  8. Serve hot, garnished with coriander.
