Grilled Madras Curry Ribs

Ingredients

  • 1 rack of pork back or side ribs (or 6-8 beef short ribs)
  • 1 cup of plain greek yogurt
  • 1 tablespoon of Patak’s Madras Curry Paste
  • 1 tablespoon of olive or vegetable oil
  • 1 tablespoon of lemon juice

Instructions

  1. Heat grill to medium high.
  2. Mix the yogurt, Madras Curry Paste, oil and lemon juice together in a small bowl.
  3. Spoon the mixture over the ribs. Cover and let sit in the fridge for at least 1/2 hour.
  4. Place on the ribs on the grill and cook for about 5 minutes on each side (depending on the thickness of your ribs) or until cooked all the way through.
